Lemon and Oregano Lamb with greek salad

 Great easy dinner for those nights when you don't have a lot of time to prepare

 

Serves 2

 

Ingredients

 

500g cubed organic lamb

handful of spinach leaves

1 cucumber

6 french tomatoes

1tbsp of feta

1tsp of olive oil

salt and pepper

 

Marinate for lamb

 

1 large lemon juiced

1.5 tsp of salt and pepper

1/2 tbsp of dried oregano

2-3 crushed garlic cloves

 

Method

 

  1. Mix all the ingredients of the marinate together and pour over the lamb. Place in the oven for 45mins or until cooked at 160 degrees celsius.

  2. Chop up the cucumber  and the tomatoes and mix with the spinach leaves and the feta. Dress with some olive oil, salt and pepper.

  3. Once the lamb is ready serve with the salad and enjoy.
