Green Breakie Bowl

One of my favourite breakfasts that I had at a cafe once and decided to recreate it myself at home. So easy and simple but so delicious.

 

Ingredients

 

Serves 2

 

1/2 cup of cooked quinoa

1/2 cup of Kale leaves

1/2 cup of spinach leaves

2 eggs

1 Avocado

1 clove of garlic

a handful of sesame seeds

1tsp of Olive Oil

Salt and pepper for seasoning

 

Method

 

  1. Fry kale and spinach in a pan with half the olive oil and crushed garlic for 3-5 mins. Season to your liking. (be careful, it cooks very quickly and can burn) Transfer to a plate

  2. Fry or poach your eggs

  3. While the eggs are cooking season the quinoa with the remaining olive oil and salt

  4. Mix the quinoa with the spinach and kale, add the egg and cut up avocado. Finally sprinkle with sesame seeds and enjoy!
